Sweet and Savory…”Crack”
I just made a really yummy version of Chex Mix that is both sweet and savory. Like me!
I created this new snack mix out of necessity. I didn’t have all the ingredients for either of the recipes I wanted to use, so I decided to combine the two and create a new snack mix of my own! I don’t know what I want to call it, yet, but I know I’m hooked.
It has a light, sweet flavor with the occasional savory bite.
The first thing you must do is grab some honey. But, unfortunately, I had to de-crystallize (is that a correct kitchen term? Is that even a word??) my wild honey. (No, not ThrillCam.) You can do this by placing the jar of honey in a small saucepan with a few inches of water, over a low heat.
Don’t rush it. Let the honey warm slowly. Your honey should eventually “thaw” out and become one with itself. (Whatever that means….)
Once your honey is ready, add 1 cup honey to 1/4 cup oil (I used canola, but you can use vegetable–just don’t use olive. bleechh! That would taste grody, I would think.)
Set your honey/oil mixture aside and let it marry. (It won’t. But, that sounded very chefesque.)
In a large bowl, place 5 cups of Rice Chex (or Wheat, or Corn, or a combo).
Add 1/2 cup to 1 cup oats to the cereal. (just ‘cuz…)
A little extra fiber never hurt anyone. Know what I mean, Vern?
Mix it up.
Now, pour that yummy honey all over the cereal/oat mixture.
Don’t be shy….drench it!
Mix the cereal and honey until evenly coated.
Spread the cereal on a foil-lined cookie sheet (you can also spray the foil with a little cooking spray, if you’d like) and bake at 300 degrees for about 20 minutes, stirring once or twice during that time.
Bake to a golden brown.
In the meantime, melt 1/4 cup butter or margarine (I’m a butter girl, myself), in a medium bowl. To the butter add the following ingredients:
1/2 tsp. garlic powder
1/2 tsp. oregano
1/2 tsp. celery salt
Add 1/4 cup Parmesan cheese to the melted butter. (I only had this kind, but I bet finely shredded would mix more evenly.)
To the butter/Parmesan mixture, add 12 oz. mixed nuts. Coat those babies.
And, once again, on a foil-lined cookie sheet, place the nuts. And, once again, bake at 300 degrees for about 15-20 minutes, stirring occasionally.
Allow the nuts to cool.
Then, when cooled, combine the honey-coated cereal and the butter-coated nuts together in a large bowl and mix well. Allow them to mix and mingle, really get to know one another….
You’ll be happy your introduced them to each other.
I put mine in my new Dallas Cowboys bucket we brought home from the new Cowboys stadium! (that’s another post for another day)
Serve this at the next Cowboys play-off game! Or, serve it when watching the Cowboys win the Super Bowl!
Or, put it in a nice nondescript bowl and enjoy!
This stuff, whatever you want to call it, and whatever you choose to serve it in, is surprisingly addictive.

I hope you like, Anne! (How are you?!!) I’m thinking about adding a little cayenne to the butter mixture, next time… This is one of those recipes that can be played with quite a bit.
